TIDES Restaurant & Bar, at Club Wyndham Airlie Beach, is launching a series of fine dining events with its first degustation evening due to be held in October.
The menu promises to take diners on a culinary journey across five courses.
Dishes such as Japanese sea scallops with coconut labneh, kiwi salsa and homemade chilli jam, and saffron prawn risotto with mascarpone cheese and fresh herbs, are creative spins on traditional ‘foodie’ favourites.
The evening will have a strong emphasis on Australian produce, starting with freshly shucked Coffin Bay oysters and utilising a tender Australian Black Angus fillet – accompanied with red wine jus, charred broccolini and black garlic and truffle mash – as the star dish.
The five courses are expertly paired with wines from some of the world’s best growing regions: Reims and Burgundy, in France, Marlborough, in New Zealand, and Australia’s own Hunter and Barossa Valleys.
“Our degustation night is a new venture for our restaurant and resort, and a unique offering for locals and travelers to Airlie Beach,” Club Wyndham Airlie Beach general manager David Smith said.
“Our team at Tides Restaurant & Bar is excited to take resort guests and locals on this inspiring culinary journey.
“The night has given our long-serving chef Matt MacCullum the opportunity to unleash his creative genius, and we know diners will appreciate the mouth-watering dishes he will plate up alongside wine pairings from William Gallagher, our recently appointed restaurant manager.
“Our commanding views of the Whitsunday Passage provide the perfect backdrop for this evening of fine dining.”
The degustation event will be held on Saturday, October 14, beginning at 6.30pm.
