New executive chef joins Daydream Island team

DAYDREAM Island Resort and Living Reef continues to expand its onsite team with the appointment of experienced culinary maestro Dougie Fotheringham, to the role of executive chef.

Boasting 25 years’ hospitality experience, Dougie brings a wealth of industry knowledge to his new role at Daydream Island, having spent the past two decades working in the kitchens of some of the world’s finest luxury hotels.

Kick starting his career in his native homeland of Scotland, he honed his culinary skills at numerous luxury hotels throughout northern Scotland before migrating to Australia.

Since relocating to Australia, Dougie has gained invaluable local experience with roles as executive chef for ACCOR and was, most recently, executive sous chef at Sheraton Mirage Port Douglas, and also assisted with the opening of JW Marriott Auckland.

In his new role as executive chef at Daydream Island Resort and Living Reef, Dougie has been busy shaking up the resort’s culinary offerings at the onsite restaurants Infinity, Salti and Graze, as well as the functions and events catering menu.

With such a varied background, and a strong commitment to fresh produce, Dougie has also been working closely with local suppliers to ensure all venues are showcasing the incredible range of fresh local produce and ingredients.

“I’m thrilled to be working at such a beautiful resort, which has so much potential, while being able to live in such a beautiful part of Australia,” Dougie said.

“I’m looking forward to creating some different menu concepts that combine my love of modern cooking techniques to help add some theatre and flair to the resort’s dining experiences.

“This includes the introduction of new gourmet experiences such as the ‘Dining by Design’ concept, which is an exclusive culinary experience for couples seeking the ultimate in romance and personalisation.

“The one-of-a-kind experience starts with a private consultation with me, where I work with guests to design a multi course menu tailored to their tastes and preferences that can be enjoyed with a private dining experience in the Underwater Observatory.”

Located in the heart of the Whitsundays, guests are spoilt for choice at Daydream Island Resort and Living Reef, with three onsite restaurants and bars and a range of activities to enjoy including swimming in the sprawling pools, exploring the coral beaches and embarking on rainforest treks.
