MANGO MADNESS: Christmas for many of us is underscored by the abundance of delicious mangoes.

The Whitsundays region contributes approximately 10 per cent of Australia’s total mango supply, and this year we are enjoying a bumper crop.

Personally, our very own mango tree is making our mango dreams come true!

In true Zero Waste style, we want to help you make the most of mango season; to store, preserve and enjoy mangoes as long as possible.

Five Ways to Make the Most of Mango Season

1. Dried Mango

A super healthy and delicious sweet treat for the whole family, dried mango couldn’t be easier.

Using a dehydrator, cut thin slices for even drying making sure none overlap. Temp 55 – 60 degrees for 8 to 12 hours checking periodically. This can keep for up to six months or longer if frozen.

2. Mango Smoothies

Peel and cube mango and store in the freezer to use year-round. For a quick, on-the-go brekkie, add banana, plant-based milk and coconut yoghurt.

3. Mango Chutney

A beloved North Queensland tradition, mango chutney can be a production line activity if you have mangoes aplenty.

Cook diced, fresh mango with vinegar, sugar, ginger, garlic and spices such as cinnamon and chili flakes to your preferred taste.

Store in sterilized glass jars, which can be collected throughout the year. This is a zero-waste win across the board.

Mango chutney also makes outstanding annual gifts.

4. Mango Lassi

The perfect drink for a Whitsundays summer afternoon, and a favourite at Indian restaurants, make your own mango lassi by blending mango, yoghurt, water and a dash of ground cardamom.

5. Mango Curry

To accompany the refreshing mango lassi above, cook mango pieces with coconut milk, turmeric, curry leaves and chili. Serve with coconut rice and roti bread.

Mango Madness

If your supply is overwhelming, peel, cube and freeze for future use.

Gazpacho, salsa, mango cheesecake, energy balls, rice pudding, sorbet, mango meringue pie – the possibilities are delectable!
